Egg paratha or Baida roti is one of the most popular Mumbai's yummy street side snack. It is a very easy to prepare snack, quickie to make.
- Take a mixing bowl, add all-purpose flour, salt, mix it and add half an egg and add some water mix this like soft dough add oil and knead the dough and let it rest for 20 minutes.
- Heat oil in a pan add chopped onions, salt, ginger garlic paste cook it till its raw flavor is gone then add green chili, red chili powder, coriander powder, garam masala, add mincemeat, cook this it is tender, then add coriander leaves.
- Roll out the dough into big chapatti and place some mince masala in the center and put some spring onions, tomato pieces, chopped mint and coriander leaves, pour one egg and fold it four sides like a pocket.
- Heat the griddle and cook the baida roti on both sides.
- Cut them into 4 pieces, serve it hot.
