Fried bitter melon rings tossed with south Indian onion masala.
- Cut the bitter melon into lengthwise and scoop out the seeds.
- Heat oil in a kadai and fry the bitter melon pieces till it is brown in color.
- Remove the excess oil and add mustard seeds when they crackle add cumin seeds, red chili, chana dal, urad dal, hing saute it for 2 minutes.
- Then add turmeric powder, curry leaves, onions saute the onions till it is cooked.
- Add chili powder, tomato pieces, tamarind juice put the lid on and cook it till the tomatoes soft.
- In this add fried bitter melon, 80%cooked toor dal, freshly grated coconut cook this for 2 minutes with the lid on.
