Bitter Gourd is considered as the bitterest of all vegetables, but when combinedwith other foods makes it more palatable. There’s nothing more easier and satisfying than a good old home-style simple Dal and bitter melon Curry.
- Scrape out the upper layer of bitter melon and cut into lengthwise by scooping out the seeds.
- Heat oil in a kadai and fry the bitter melon pieces till it is brown in color. Remove the excess oil and add mustard seeds when they crackle add cumin seeds, red chilli, chana dal, urad dal, asafoetidasaute it for 2 minutes .
- Then add turmeric, curry leaves, onions, saute the onions till it is cooked.
- Add chilli powder, tomato pieces, tamarind juice and cook it with closed lid till the tomatoes are soft.
- In this add fried bitter melon, 80% cooked toor dal, freshly grated coconut, cook this for 2 minutes with the lid on.
- Garnish with coriander leaves and serve with chapati or roti.
