Chana dal and brinjal curry are very tasty and popular in south Indian. In any recipe we add eggplant then the flavor of that recipe will be increased.
- Soaked the chana dal in water.
- Heat oil in a pan, add onions, a little salt and saute it.
- Add ginger garlic paste, turmeric powder, curry leaves, soaked the chana dal, water and cook it for around 5-6 minutes with the lid on it.
- Add slender brinjal, red chilli powder, coriander powder, cumin powder, a little salt.
- Place lid and cook it for 3-4 minutes but dal should not be overcooked, add garam masala and mix nicely. switch off the flame.
- At last, add coriander leaves and mix nicely.
