A much cherished and relished vegetable in our home is bitter gourd. Since the sliced bitter gourd cooked in tangy tamarind sauce and also coconut addition mask its bitterness gives great taste and goes well with rice and rotis.
- Cut bitter gourd into round slices.
- Take a pan and add dry red chillies, chana dal, coriander seeds and dry roast and transfer into mixie jar, add roasted coconut and make paste.
- Heat oil in a pan and add bitter gourd and saute it, later transfer into a plate. In the same pan and add mustard seeds, urad dal, onion, little salt, curry leaves and saute it.
- Add ginger garlic paste, turmeric powder, green chillies, tamarind juice, blended paste, little water and mix it.
- Add bitter gourd and check seasoning then add little salt, jaggery.
Atlast cook it for 5 minutes, with a lid on it.
