Andhra chicken pulao is a traditional and classic Andhra dish. It’s a pleasant rice based delicacy which has its own unique and distinctive flavors. Normally the Andhra dishes are spicy and flavorful. This dish is popularly known as the Kodi pulao which means chicken pulao.
- Take a bowl and add chicken pieces, salt, chili powder, curd, mint leaves, curry leaves and mix it well and rest it for one hour.
- In a pan add poppy seeds, cloves, cardamom, cinnamon, caraway seeds and saute it.
- And transfer into a blender and make it into a fine powder and then add coconut pieces and make it a paste and keep aside.
- Now take another pan and add whole garam masala, sliced onion, salt, ginger garlic paste, turmeric powder, green chilies, curry leaves and cook it well.
- Add poppy seeds paste and cook it well and add coriander powder and cook it.
- Now add marinated chicken add soaked basmati rice and put on the lid and cook it for 5 minutes.
- Add one cup of water and mix it.
- Then add fried cashew nuts, coriander leaves and put on the lid and cook it for 20 minutes.
