Aloo Banigan is an amazing combination and make a delicious flavorful side dish when they cooked together with onion, tomatoes and spices.
- Take Pressure cooker and add oil , once it is heated add hing, methi daana, zeera, mustard seed.
- Once they start to pop up, add onions and fry them till they turn light brown, then add grated tomatoes and fry it till oil separates.
- Add green chilies, potatoes and fry it for 2 minutes.
- Now add haldi, dhania, red pepper, chopped small brinjals and mix it well.
- Add salt along with 3/4 cup of water and close the lid of cooker.
- Cook for 2 whistles and let it cook in its own steam for 5-7 minutes. Open the lid, when no steam left.
Serve it with phulkas /parathas.
