Vegetable rice is an easy to cook recipe. This an Indian recipe to pack for lunch box.It is enhanced with the flavors of jeera.
- Soak rice for one hour.
- From half part of coconut take out two cups of milk by the grating.
- Cut the potatoes, carrots and banana into slices, then saute them separately by salt in it and keep it aside.
- Boil Green peas in water.
- Take a pan add some oil, chopped onions and saute them till they become red in colour.
- Add green chillies, cloves, cinnamon, black pepper, cumin seeds, ginger garlic paste then saute it.
- Then grated coconut, tomatoes, coriander leaves, green gram, rice and saute again.
- Add coconut milk, some water, fried potatoes, carrot slices and cook them.
Now garnish with round fried onions, banana slices and coriander leaves.
