Andhra Brinjal Curry is a South Indian curry recipe made using brinjal.
- Take the oil in frying pan and add red chillies and onions (chopped)to it ,keep moving them not making the onions red .
- Now longitudinally slice the brinjals (vankai ) in a bowl of water as they get brown quickly .
- Keep adding all the brinjals with a bit of water ( sprinkling only ) so that you get steam to soften the mixture .Add salt to the mixture.
- Keep the lid on the mixture and keep turning it so that you do not burn it . 20 minutes you get vankai vepatum . the strong smell.
