Spiny gourd is a seasonal vegetable popular in the state of Rajasthan especially during the rainy season. This vegetable has got a wonderful crunchy bite and complements very well with rice.
- Wash and cut spiny gourd into 4 pieces.
- Heat oil in a pan, add spiny gourd pieces, salt, saute it and cook it with closed lid for 4-5 minutes on slow flame.
- Once it is shallow fried transfer into a plate, in same oil pan add mustard seeds, cumin seeds, red chilies, turmeric powder, curry leaves, fenugreek powder, Kashmiri chili powder, crushed garlic and saute it.
- Add fried spiny gourd and mix nicely and check for seasoning, if required add salt, red chili powder and saute it.
