This is a special chicken fry the we make during the sunday non-veg feasts in our lunches. Its very easy to prepare and doesnt need much ingredients too.Heat oil in a heavy bottomed pan. Once the oil is hot drop the cinnamon sticks broken into peices and the redi chillies. Add the finely chopped onions onto the pan and start frying them. Once the onions are transparent, add 1/4th spoon of turmeric powder and salt and sauter. On top of that add the cleaned and washed chicken pieces and mix it fine. Keep stirring the chicken then and there. When you see water woozhing out from the chicken reduce the flame. The chicken gets cooked from that water alone. Once all the water evaporates it means the chicken is done. Keep stirring the chicken regularly so that is never catches the bottom of the pan. If wanted a chopped tomato can be added in the middle to get a sour taste. Sauter until the chicken pieces are dry and should look oily. (The onions are the only ingredients that give taste to the chicken and there is no need to add ginger-garlic paste and water. The red chillies are the only source of spiciness so no need to add chilli powder.) Garnish with corriander leaves while serving.
