Description
Quick and easy curry esp. for college studentsSoak the soya chunks and dried shiitake mushrooms for sometime. You can soak them in the evening, put them in the fridge at night and use the next day.
To make:
Chop the stems of the shiitake mushrooms and slice them in half. Divide the heads into 4 quarters. Finely chop the onions, tomatoes and ginger. Coarsely chop the garlic. You can even chop into big chunks. Halve the green chillies.
Add 2 tbsp of oil into your pressure cooker. Add the chunks of garlic (they will soften, dont worry). After a minute or so, add split red chillies to the oil and fry till they shine a bit, then add cumin seeds and wait for about 10 seconds for them to cook. Then add the chopped onions and ginger and fry till the onions start getting golden. Immediately add the chopped tomatoes and green chillies. When the tomatoes are half cooked (about 5 mins), add coriander powder, cumin powder, garam masala powder, red chilli powder and cook till the tomatoes are close to well cooked. Then add coconut milk, a quarter cup (to half cup) of water, the soya chunks, mushrooms and vegetables, and close the pressure cooker lid, and put the whistle on top. Cook on medium flame upto 1 whistle.

- → Mix Vegetables 1 Cup.
- → Mushrooms (Shiitake preferred) 7 Numbers.
- → cumin seeds 1 Teaspoons.
- → green chillies 2 Large.
- → coconut milk (optional) 1 Can.
- → red chillies 6 Numbers.
- → red chilli powder 2 Teaspoons.
- → garam masala powder 1 Pinch.
- → onions 1 Large.
- → garlic 5 Clove.
- → ginger 2 Head.
- → tomatoes 5 Small.
- → Oil 2 Tablespoons.
- → coriander powder 1 Tablespoons.
- → cumin powder 1 Teaspoons.
