Shahi tukda is a quick and easy bread pudding dessert of fried bread slices soaked in rabri. The dish has its roots in Mughlai cuisine. Shahi means royal, the dish gives rich taste.
- Boil milk in a bowl until it turns to a thick consistency (rabri) and keep aside.
- Heat water and sugar in a pan until it melts to syrup, later add cardamom powder and mix it.
- In a plate, add khoya, paneer, all purpose flour, pinch of cardamom powder and mix it.
- Take bread, cut into pieces and spread khoya mixture on one bread slice and top it with another bread slice.
- Heat oil in a pan, deep fry the above stuffed bread slices and transfer into paper towel.
- Later, dip bread slices in sugar syrup.
- To the rabri mixture, add mango pulp and mix it.
- To it, add saffron water, pinch of cardamon powder(optional) and mix nicely.
- Take a serving plate, place soaked bread slices and top it with mango rabri, slivered almonds.
Now the Sahi thukda with mango rabri is ready to serve.
