Ingredients used in Chocolate Chicken Mole
• Chicken stock - 1-1/2 cup.
• Tomatoes - 5 numbers.
• Oregano and thyme - 1 tea spoon.
• Onion (chopped) - 1 number.
• Garlic (chopped) - 1 tea spoon.
• Raisins - 1 tablespoon.
• Almond - 10 numbers.
• Fennel seeds - 1 tea spoon.
• Allspice - ½ tea spoon.
• Cloves - 3 numbers.
• Cinnamon sticks - 2 numbers.
• Cumin seeds - 1/2 tea spoon.
• Coriander seeds - 1 tea spoon.
• Chicken - 1000 grams.
• Salt - to taste.
• Red chili paste - 2 tablespoons.
• Olive oil - 2 tablespoons.
• Chocolate (melted) - 1 cup.
• Oil - 4 tablespoons.
• Red chili powder - 1 tablespoon.
Method:
  • Chicken marinate with chilly powder, salt and pan fry them with 3 tablespoons oil till chicken is tender.
  • Cut Tomatoes into half and char on a griddle till it is soft.
  • In a pan dry roast the following ingredients coriander seeds, cumin seeds, cinnamon sticks, cloves then add allspice, fennel seeds, almonds, raisins dry roast it. chopped garlic.
  • Add chopped garlic, chopped onions, cook this and add 1tablespoon oil, oregano, and thyme.
  • Add roasted tomatoes, chicken stock, salt and cook it until tomatoes aresoft.
  • Let it cool down, put it in the blender and make a paste.
  • Heat olive oil and add red chilly paste, cook it for a minute and add made masala paste cook this mixture for some time.
  • Now add melted chocolate, salt, mix it well cook for some more minutes.
  • Pour the sauce over the chicken pieces.

Serve this with Mexican rice.

Chocolate Chicken Mole is a very popular Mexican dish that can be prepared in countless regional variations.

 

Mole meaning mixture or concoction is a traditional Mexican sauce made from a variety of local ingredients. It is traditionally made using powdered chillies or red chilli paste, cinnamon, smoked paprika, tomato and a hint of dark chocolate to make a deep, decadent sauce with a light heat, smokiness and velvety finish. This sauce is a very popular dish at celebrations. The dark chocolate adds striking color while the spices add richness to the Mole sauce.

 

Moles are great sauces of Mexico that are richly spiced and complex. They can be green, yellow or red but most familiar is the one made with the seductive addition of dark chocolate. Mole is said to be the signature sauce of Mexico, particularly a delicious example of this trend and style.  This recipe is a simplified version of the tradition Mole. Mexican chocolate adds an intriguing complexity to the smoky, savory sauce.

 

Mole preparation begins with at least one or more type of chili peppers. The addition of red chilli paste, cloves, allspice, and cinnamon add up to that extra zest to the sauce. Chocolate should be added at the end of the cooking. The key element of this yummy sauce can be grouped into the different taste senses that includes: chillies (spice, hot), sour (tomatoes), sweet (raisins, fennel seeds) and other flavoring spices. All spices/ ingredients are roasted and ground into a fine powder or paste which elevates the flavors and aroma, hence making mole sauce a strong flavor especially the dark one and is considered to be an acquired taste for most.

 

How to prepare Chocolate Chicken Mole:

Ingredients:

  1. Chicken                   -       1000 gms
  2. Coriander seeds       -       1 tbsp
  3. Cumin seeds            -       1 tsp
  4. Cinnamon sticks     -       2 nos
  5. Cloves                      -       3 nos
  6. All spice                   -       ½ tsp
  7. Fennel seeds            -       1 tsp
  8. Almonds                  -       6 nos
  9. Raisins                    -       8 nos
  10. Garlic, chopped       -       4 nos
  11. Onions, chopped     -       2 nos
  12. Oregano                   -       ½ tsp
  13. Tomatoes                 -       6 nos
  14. Chicken stock          -       1 cup
  15. Salt                             -       to taste
  16. Red chilli paste        -       2 tbsp
  17. Olive oil                   -       2 tbsp
  18. Chocolate, melted    -       ½ cup

Directions:

  1. Marinate chicken with chilli powder, salt and pan fry them until chicken is tender.
  2. Cut tomatoes into two halves and char on a griddle until they become soft.
  3. In a pan, dry roast coriander seeds, cumin seeds, cinnamon sticks, cloves, all spice, fennel seeds, almonds, raisins, garlic, onions and cook well.
  4. Add little oil, oregano, roasted tomatoes, chicken stock and salt. Mix all the ingredients well.
  5. Allow this to cool down and put them in the blender and make a smooth paste.
  6. Heat olive oil in the same pan and add red chilli paste. Cook for a minute and add the masala paste. Cook this mixture for some time over slow fire.
  7. Add melted bitter chocolate, salt and stir well. Allowing cooking for few minutes.
  8. Remove and pour the sauce on the chicken pieces.
  9. Serve with Mexican rice on the side.

Many families have their own varieties of mole passed down for generations, with their preparation reserved for special events in large batches. hands down my favorite dish to eat/cook! i honestly eat mole probably like 2 or 3 times a week! there are some restaurants near me that happily make AMAZING versions of their moles!
