Hoisin sauce is a thick, pungent and spicy sauce commonly used in Chinese cuisine to glaze the meat or added to stir fries or used as a dipping sauce. It is darkly coloured in appearance and has a nice sweet and salty taste.
Hoisin sauce can be prepared in various ways depending on the regional variants. It often includes soy, red chillies and garlic as the main ingredients. Other ingredients are vinegar and sugar. Hoisin sauce is used to flavor a number of Chinese dishes such as spring rolls, peking duck, barbecued pork etc. It is especially common in Cantonese cuisine flavoring. I think fresh water fish (like barramundi) is better than salt water fish... more flavoursome, and the texture is better, softer (I think). Thanks for the recipe - it is good.
