CORN AND BARLEY TEMPERED RICE WITH FLAX SEEDS VADA

Ingredients used in CORN AND BARLEY TEMPERED RICE WITH FLAX SEEDS VADA
• Barley - 1 cup.
• Oil - to fry.
• Mustard seeds - 1/2 tea spoon.
• Dry red chillies - 5 numbers.
• Cumin seeds - 1/2 tea spoon.
• Urad dal - 1/2 tea spoon.
• Cashew nuts - 8 numbers.
• Curry leaves - 1 spring.
• Green chilies - 1 number.
• Corn - 1/2 cup.
• Salt - to taste.
• Coriander leaves - 1/4 bunch.
• Lime juice - 1 tea spoon.
• Flax seeds - 1/4 cup.
• Mint leaves - 1/4 bunch.
• Chana dal - 1 cup.
• Onions(chopped) - 1 number.
Method:
  • Soak barley and boil it for 4 minutes.
  • Heat 1 tablespoon oil in a pan and add mustard seeds, 2 nos dry red chillies, cumin seeds, urad dal and saute it.
  • To it add cashew nuts, curry leaves, green chillies, corn, salt, coriander leaves and saute it.
  • Add barley and mix nicely and cook it for 3 minutes with lid on it.
  • Remove lid and add lime juice and mix nicely and place the lid and keep aside.
  • For Flax seeds vada: Take a mixie jar and add flax seeds, mint leaves and blend it once.
  • To it add Soaked chana dal, 3 nos dry red chillies, and blend it again into coarse paste.
  • Transfer into a bowl and add chopped onions, salt and mix nicely.
  • Take small dumpling and make flat round with wet hand and deep fry in oil.
  • When it changes to golden brown in colour remove into a paper towel.

Now corn and barley tempered rice with flax seeds is ready to serve.

Barley is eaten for various reasons that you actually must have never known.  It is a simple grain packed with many health and beauty benefits. It is relatively low in calories, packed with vitamins and nutrients and high in fiber.

Any dish made of barley is nutrient rich and makes a satisfactory meal. Barley is considered to one of the best whole grain choices as it has some impressive health benefits on heart health and diabetes protection. Actually Barley is one of the oldest consumed grains across the world and has been the staple grain mainly for the peasants during medieval times for centuries. As of today it is still included in various diet plans in many countries like Europe, Africa and Middle Eastern nations.

To get the best benefits from barley, it is always recommended to soak and sprout the uncooked barley grain as it helps to unleash their nutrients. This makes it more beneficial and also easier to digest. It also reduces the amount of gluten present within the barley to some degree. A number of research studies have shown that grains when soaked and sprouted improves in digestibility and nutrient absorption are commonly seen and the levels of vitamin, protein, mineral and antioxidant are increased. Recipe of Corn and Barley Tempered Rice with Flax Seed Wada:

Ingredients:

 Barley                                   -        1 cup

Corn                                     -        ½ cup

Oil                                        -        1 tbsp

Mustard seeds                   -        ¼ tsp

Red Chillies                       -        2-3 nos

Cumin seeds                      -        ¼ tsp

Split Black Gram              -        1 tsp

Cashewnuts, split           -        5-6 nos

Curry leaves                      -        1-2 sprigs

Green Chillies                  -        2-3 nos

Salt                                      -        to taste

Coriander                           -        1 bunch

Lime juice                          -        ½ lime  

Ingredients for Flax seeds Vada:

Flax Seeds                      -        2 tbsp

Channa Dal                   -        1 cup

Mint Leaves                   -        2 tbsp

Onions                            -        1 no

Salt                                   -        to taste

Oil                                    -        For deep frying 

Directions:

  1. Soak Barley grains in water for an hour and later cook for about 4-5 mins and keep aside.
  2. Add oil in pan and when it gets hot, add mustard seeds. When they crackle, add red chilies, cumin seeds, split black gram, cashew nuts and sauté until they turn slightly golden in color.
  3. Add curry leaves, finely chopped green chillies, corns, salt to taste, finely chopped coriander leaves and barley.
  4. Toss all the ingredients well. Cover and cook for about 2-3 mins. Switch off the flame and squeeze over ½ lemon juice and mix.
  5. Serve hot with Flax Seeds Wada.
  6. For making the flax seeds wada, in a mixie jar, add grind, mix channa dal, few mint leaves and grind to a coarse paste. Transfer into a bowl.
  7. Mix finely chopped onions, salt to taste and mix well. Shape into wada and deep fry until golden brown. Serve hot.

Corn and Barley Chitrannam (Tempered rice) served with flax seeds wada is an excellent combination and a wholesome breakfast to start your day. Do try this recipe and serve your kids too.
