Eggplant bajji with stuffing inside the bajjis makes it even tastier. Brinjal Bonda (Brinjal Bajji) is a delicious Indian recipe served as an Appetiser.
- Take a mixie jar, add sesame seeds, tamarind and make it into a powder.
- Cut the brinjal vertical, remove the seeds and keep aside.
- Now take a pan, add oil, leftover brinjal seeds, red chili powder, salt and mix it well.
- Then add sesame seeds and tamarind powder, boiled and mashed potatoes, chopped green chilies, salt and cook itnicely.
- After that take this mixture to the plate. Then stuff the mixture into the cut brinjal as shown in the video and keep aside.
- Now take a bowl, add chickpea flour, a half teaspoon of oil, ajwain, red chili powder, salt, baking soda along with some water and mix it well like bonda batter.
- After that take the stuffed brinjal, dip in the above-prepared batter. Deep fry till they turn to light brown in color.
- At last, sprinkle the chat masala on top.
