Nei Chor(Traditional Ghee Rice )1

Description
This is a traditional ghee laden rice that is very famous in the malabar region of Kerala, hope you love it. This is my first recipe being posted here.1. First Soak the basmati rice in water for about an hour. 2. drain the water from the rice and keep aside. 3. heat a vessel and add 2 tsp of ghee, add the drained rice to this once its heated. 4. keep moving the rice, until all the water gets dried and rice grains get coated by the small amount of ghee, do not do this for long as you do not want the rice to be fried but only dried. 5. Set the dry sauted rice aside. 6. Prepare the pressure cooker for cooking the rice. 7. Add the 1 cup of ghee , to the pressure cooker and in the time it heats up slice the onions to be added. 8. add the sliced onions to the ghee in pressure cooker and as Sanjay always says add salt at this point to fasten the process of the onion frying. 9. keep stirring the onions till they are fried to slight brownish color but not totally roasted. 10. at this point add the solid pieces of garam masala to the hot ghee. 11. Now add the dried and sauted rice to this pressure cooker. 12. add water in the measure of 1.5 cup water for every 1 cup of rice, make sure there is not more than this water as it can spoli ur rice completely. 13. mix the content well and pressure cook it until you get a single whistle. 14. tip -gt; do not put the whistle on top until u see steam coming out of it this makes sure your rice is not pre-maturely cooked. 15. do not open the cooker for 10 minutes after its switched off.. 16. after 10 minutes open the container and mix well. 17. add the fried cashews to this and again mix well. 18. tasty nei chor / ghee rice is ready to server :)
Ingredients
- → Broken Cashews ( Fried earlier and set aside) 10 Numbers.
- → Water 3 Cup.
- → Onions 2 Numbers.
- → Other Solid Masala Pieces ( patta /karamabu) 3 Numbers.
- → Cloves 2 Numbers.
- → Ghee 1 Cup.
- → Basmati Rice 2 Cup.
