A mixed vegetable curry is a perfect combo for complete day nutrients. It can be enjoyed with rice or even roti.
- Take a pan and add dry red chilies, coriander seeds, cinnamon stick, cloves,cardamom, caraway seeds,pepper corns. Saute it for 3 to 4 mins.
- Now add all these ingredients into a blender, make it to a fine powder and keep aside.
- Take a pan, add oil, chopped carrot, chopped beans, chopped potato and saute it.
- To it, add turmeric powder, curry leaves and mix it.
- Now add chopped cauliflower, tomato puree, water and masala that we have prepared atthe start. Cook it for 3 to 4 more minutes.
- Then add butter and kasuri methi to it and mix it.
- Again add chopped capsicum, chopped onion, and tomato and mix it well.
