Potato fried rice recipe is a quick and easy Indian style rice recipe. In this recipe potatoes are pan-fried and added to spiced rice. This is a spicy lunch box recipe.
- Take potato dices add 1 teaspoon cornstarch for crispiness.
- In a hot oil drop potato dices and fry it.
- After 2 minutes take it out from oil and transfer into a serving plate.
- Take kadai add oil, chopped ginger, chopped garlic, green peas, capsicum, green chillies, curry leaves and saute it.
- Then add turmeric powder, chopped tomatoes, cooked rice and reduce the flame.
- Add sugar, white pepper powder, fried potatoes, salt and increase the flame to saute it.
- Then add lime juice, coriander leaves and mix it well.
- Keep it in a simmer flame.
- In a bowl add rice flour, ginger garlic paste, chili powder, cumin powder, coriander powder, garam masala powder, water, coriander leaves and mix it nicely.
- Then add ring onions and mix it well.
- Take the same deep fried oil then add these onions and fry it.
- Transfer into a plate.
- Now the fried rice is cooked and transfer into a serving bowl.
- Serve hot with chips or onion raitha.
