- Heat the water in a saucepan and cook garlic, ginger, sugar, soy sauce and thai fish sauce over high flame for 5 minutes.
- Mix corn flour in ahlf cup of water and str well until no lumps remain.
- Add the lime juice, red chilli. To thicken the sauce, mix corn flour mixture slowly to the sauce until it thickens. To add colour and flavour to the sauce, add the spring onions and coriander at the last minute.
