Coastal egg pulav is a special egg pulav where boiled eggs are fried and served along with a flavorful pulav rice. Its a must try for a tasty coastal country side pulav.
- In a hot pan dry roast cloves, cardamom, cinnamon along with shahi jeera and poppy seeds. Let it cool down put all these ingredients in a blender and make a powder, to this add coconut pieces, green chili makes it into a paste.
- Heat 1tablespoon ghee in a pan add boiled eggs, salt, chopped coriander fry it for 2 minutes.
- In a big pan add ghee, once the ghee is a hot put bay leaf, Marathi moggu, peppercorns saute it.
- Then add cashew nuts, slices of onions, salt cook this till onions slightly golden color, add curry leaves, mint leaves, ginger garlic paste saute it and add prepared masala and poppy seed paste mix it once.
- Add water (when we take 2 cups of rice we need 3 ½ cups water) adjust the seasoning, when water comes to boil add soaked rice.
- Once it comes to boil mix it once then put the lid on and cooks for some time. All moisture is evaporated mix it and cook this in a slow flame with lid on.
- After 2 minutes switch off the flame and add fried eggs mix it slowly and rest it for 5 minutes.
Serve this with raita.
