Chicken Chettinad1

Chicken Chettinad or Chettinad Chicken is a classic Indian recipe, from the region of Chettinad. This chicken is made by toasting a number of spices.

• Heat oil in a heavy-bottomed pan on medium level till hotthen add mustard seeds, cumin seeds, whole garam masala and chopped onions, salt saute it.
• Once they are golden brown in coloradd turmeric powder, ginger garlic paste, green chillies, curry leaves mix it and cook.
• Add chopped tomatoes, red chilli powder, coriander powder, cumin powder and cook it for 10 minutes on a medium flame.
• and fry for about 3 minute(s) or till the oil leaves the sides of the pan.
• Add the chicken and mix well, cover with a lid and cook for 5 to 7minutes.
• Add crushed pepper, sprinkle salt to taste mix it and cook, till the chicken is fully tenderised.

  Garnish with finely chopped coriander leaves and serve with hot rice.
