Sukha Aloo Methi is an awesome dry fry side-dish preparation made with aloo (potatoes) and methi (fenugreek leaves) cooked together with spices, amchur powder and lemon to give a tangy zest to the dish.

  1. Cook potatoes and cut in to med. sized cubes (or mash), slit green chillies and chop the fenugreek leaves.
  2. Heat oil in a pan, fry cumin seeds, slit chillies and onions till it turns golden.
  3. Add turmeric powder and tomatoes and cook for 2 minutes.
  4. Add fenugreek leaves and cook for 30 seconds. Now add chilli powder, garam masala powder, salt and yoghurt. Mix all the ingredients well.
  5. Add potato and cook for 6-8 minutes stirring now and then. Cook till all the water evaporates.
  6. Serve hot with chapati, dosa or as a side dish with rice.

  1. Methi leaves, finely chopped             -       ½ cup

  2. Potatoes, cut into small pieces         -       250 gms

  3. Salt                                                           -       to taste

  4. Turmeric powder                                  -       pinch

  5. Oil                                                            -       1 tbsp

  6. Onions, finely chopped                     -       1 no

  7. Coriander powder                               -       ½ tsp

  8. Cumin powder                                     -       ½ tsp

  9. Red chilli powder                               -       1 tsp

  10. Garam masala powder                     -       pinch

  11. Amchur powder                                  -       ¼ tsp

  12. Lemon juice                                         -       ½ no


Directions Aloo Methi Curry



  1. Heat some oil in a kadai and when it becomes hot, add finely chopped methi leaves and fry well.

  2. Add some salt, turmeric powder and mix well. When the methi leaves are nicely fried and crispy, add some finely chopped onions, coriander powder, cumin powder, red chilli powder and pinch of garam masala powder.

  3. Add small pieces of potatoes and sauté well. Add amchur powder and mix well.

  4. Cover the pan with an lid and allow cooking for 7-8 minutes. Keep stirring in between.

  5. Add little lime juice, mix well. Switch off the flame once they are fried nicely.

  6. Serve with roti, chapatti, phulka or rice.
