I love this punjabi dish a lot cause it has my 2 favorite veggies in it... aloo and methi! Quite simple to make and very yummy... hope you enjoy it.Wash methi leaves and chop them finely. Sprinkle some salt over it and leave aside for about half an hour. Squeeze out the water from the methi leaves and keep aside. Heat oil (or ghee - it gives better flavor) in a pan and add cummin seeds. When they crackle, add onion and saute till they are almost brown. Then add garlic, ginger, salt, red chilles, and boiled pototoes. Stir fry for some time. Add methi leave, coriander powder, turmeric powder amp; hing and mix well. Cover with a lid and cook for about 10 mins on a slow flame, stirring ocassionly to ensure it doesnt stick to the bottom.
