STUFFED KARELA

Ingredients used in STUFFED KARELA
• Bitter gourd - 4 numbers.
• Ground nut - 1/4 cup.
• Sesame seeds - 1 tablespoon.
• Red chili powder - 1 teaspoons.
• Cumin powder - 1/4 teaspoons.
• Coriander powder - 1/4 teaspoons.
• Salt - to taste.
• Jaggery - pinch.
• Oil - as required.
• Mustard seeds - 1/4 teaspoons.
• Red chillies - 2 numbers.
• Curry leaves - 1 spring.
• Tamarind juice - 1/2 cup.
Method:
  • Cut bitter gourd into big roundels and in center make a hollow by removing seeds.
  • Heat pan add ground nut dry roast it, later add sesame seeds and dry roast for 1 minute.
  • Switch off flame and allow it rest for some time and transfer into blender.
  • To it add red chili powder, cumin powder, coriander powder, salt, little jaggery and blend into a powder.
  • Stuff this powder into bitter gourd and keep aside.
  • Heat oil in a pan, add mustard seeds, red chillies, curry leaves and saute it.
  • Add stuffed bitter gourd and cook it slightly with lid on it.
  • To it add tamarind juice and cook again with lid on it.
  • Once it soft switch off flame and it delicious if you rest it for 1 day and serve it.
