Ingredients used in risotto with radicchio
• Vegetable stock - 500 ml.
• Butter - 2 teaspoons.
• Red wine - 200 ml.
• Carnaroli rice - 320 grams.
• Onions - 2 piece.
• Red chicory - 1 piece.
• Salt and pepper to taste - .
• Grated parmesan - .
gently fry chopped onions in butter, fry rice to toast for a couple of minutes then add sliced chicory, add red wine and wait to be evaporated. cover with veg stock in a simmer low flame and keep it lid. add stock if necessary until the rice is cooked. turn off flame and add grated parmesan and leave it lid until it is melted with the rice. serve with a parsley pinch on each plate
