ZUCCHINI MUFFINS

Ingredients used in ZUCCHINI MUFFINS
• All purpose flour - 1 cup.
• Sugar - 1/2 cup.
• Oil - 1/2 cup.
• Zucchini(grated) - 1/2 cup.
• Baking powder - 1/2 tea spoon.
• Pepper powder - 1/2 tea spoon.
• Baking soda - 1 pinch.
• Herbs - 1/2 tea spoon.
• Cashew nuts(chopped) - 1 tablespoon.
• Egg - 1 number.
• Cheese(grated) - 1/2 cup.
Method:
  • Take a bowl and add sugar, oil, eggs and mix thoroughly.
  • Take a plate and add all purpose flour, baking powder, baking soda, herbs, pepper powder, cashew nuts, zucchini and mix it.
  • Add this mixture to egg mixture and stir it.
  • At last add cheese and mix nicely.
  • Pour this mixture in muffin moulds.
  • Bake them at 180 degree centigrade for 15 -20 minutes.
  • Demould and cut it.

Now the zucchini muffins are ready to serve.
