Ingredients used in Vendakai Okra Kozhambu
• Turmeric - 1 pinch.
• Chilli powder - 1 or 1 1/2 teaspoons.
• Cummin powder - 1/2 teaspoons.
• Coriander powder - 3 teaspoons.
• Curry leaves - As Desired leaf.
• Mustard and urad dal (each) - 1/2 teaspoons.
• Tomato, chopped - 1 large.
• Onion, thinly sliced - 1 large.
• Vendakai (okra) - 400 grams.
• Tamarind extract - 2 tablespoons.
• Oil - As Desired teaspoons.
• Salt - As Desired teaspoons.
• Cilantro, chopped for garnishing - .
Method:
1.Heat very little oil in a pan and fry the Vendakai (okr)a a bit to eliminate the stickiness. Then set aside 2.Add more oil to the pan and heat 3.Add mustard (should crackle), then add urud dal and curry leaves and stir fry 4.Add sliced onion and fry until light golden brown 5.Add very little water (just before the next step) 6.Add powders (turmeric, coriander, cumin and chilli) and fry till the raw smell of powders have been eliminated 7.Add tomato and fry 8.Add vendakai (Okra) and mix well with the masala ndash; reduce heat 9.Add salt (to taste) 10.Add water to desired consistency and cook till vendakai is done 11. Add tamarind extract 12.Taste and check for salt 13.Finally, garnish with cilantro
