Ingredients used in VEGETABLE ADAI IDLI
• Idli rava - 1 cup.
• Idly rice - 1 cup.
• Urad dal - 2 tablespoons.
• Chana dal - 2 tablespoons.
• Curry leaves - 1 springs.
• Red chilly - 5 numbers.
• Carrot(finely chopped) - 1/2 cup.
• French beans(finely chopped) - 1/2 cup.
• Corn - 1/2 cup.
• Cooking soda - 1/2 tablespoon.
• Butter milk - 1/2 cup.
• Salt - to taste.
• Asafoetida - 1 pinch.
• Oil - 1 tea spoon.
Method:
  • Take a bowl and add idli rice, idli rava, urad dal, chana dal, curry leaves, red chilly, water and wash once then strain the water.
  • To it add salt and asafoetida.
  • Now add enough of water just to soak the ingredients for 2 to 4 hours.
  • Then in a mixie jar blend it coarsely to make idli batter and take into a bowl.
  • Add carrot, french beans, corn, cooking soda, buttermilk (or enocan be used) and mix thoroughly.
  • Take an idli mould and spread oil then pour the batter and steam it for 10 minutes.
  • Now the hot vegetable adai idly is ready to serve.

looks yummy! i think eno is sold in the states as a stomach antacid... i'm going to have to see what the guys at the indian store says about it... could i just ferment the mixture instead??

It's a problem to get the idli or dosa batter fermented in UK because cold climate. I tried to keep the batter in the boiler room overnight. It works sometimes. But adding baking powder is working fine?
