Ingredients used in TOFU RICE
• Oil - as required.
• Onion(chopped) - 1 number.
• Salt - to taste.
• Capsicum(chopped) - 1 cup.
• Potatoes(chopped) - 1 cup.
• Carrot(chopped) - 1 cup.
• Turmeric - 1/2 tea spoon.
• Coriander powder - 1 tea spoon.
• Cumin powder - 1/2 tea spoon.
• Red chilli powder - 1 tea spoon.
• Tofu(chopped) - 1 cup.
• Boiled rice - 2 cups.
Method:
  • Heat some oil in a pan, add chopped onion, salt, saute it till onions are slightly transparent.
  • Now, add chopped capsicum, potatoes, saute for about a minutesput carrot, turmeric and saute it again till it’s 80% cooked.
  • Then season it with coriander powder, cumin powder, red chili powder, tofu and mix it properly.
  • In the same pan, add boiled rice and mix thoroughly.
  • Switch off the flame and serve hot in a plate or pack in your kid’s lunch box.
