Ingredients used in Tindora & Methi Leaves Fried Rice
• Water - as required.
• Salt - to taste.
• Soaked rice - 2 cup.
• Oil - as required.
• Mustard seeds - 1 tea spoon.
• Dry red chili - 3 number.
• Cumin seeds - 1 tea spoon.
• Urad dal - 1 tea spoon.
• Peanuts - 1 tablespoon.
• Curry leaves - 3 springs.
• Green chilies (chopped) - 4 number.
• Hing - 1 tea spoon.
• Tindora (chopped) - 8 number.
• Fresh coconut paste - 1/2 cup.
• Sugar - 1 tea spoon.
• Sambar powder - 1 tablespoon.
• Fenugreek leaves - 1/2 cup.
• Turmeric powder - 1 tea spoon.
Method:
  • Boil water in a vessel, season with salt, add soaked rice and cook it.
  • Heat oil in a pan, add mustard seeds, dry red chilies, cumin seeds, urad dal, peanuts, sauté till peanuts crackle, add curry leaves, chopped green chilies, turmeric powder, hing, chopped tindora pieces, salt and cook well.
  • Now add a pinch of sugar, fresh coconut paste, sambar powder, chopped fenugreek leaves, saute for about5 minutes, transfer the cooked rice, toss well and turn off theflame.

Delicious Tindora & Methi Leaves Fried Rice is now ready to serve.
