SWEET CORN AND TOMATO SOUP

Ingredients used in SWEET CORN AND TOMATO SOUP
• Oil - 1/2 tablespoon.
• Garlic(chopped) - 1/2 tea spoon.
• Sweet corn - 1/2 cup.
• Green chillies(chopped) - 1-2 numbers.
• Cucumber(finely chopped) - 1/4 cup.
• Green bell pepper(finely chopped) - 1 tablespoon.
• Tomato(finely chopped) - 1/2 cup.
• Soya sauce - 1/2 tea spoon.
• Sugar - 1/2 tea spoon.
• Red chili sauce - 1/2 tea spoon.
• Salt - to taste.
• Corn flour - 1 tablespoon.
• Coriander leaves(chopped) - 1 tea spoon.
• Lime juice - 1 tea spoon.
Method:
  • Heat oil in a pan and add garlic and slightly saute it,
  • Add sweet corn, green chillies, cucumber, green bell pepper, tomato, soya sauce, little sugar, red chili sauce and saute it.
  • To it add water and boil it.
  • Make a corn slurry with little cornflour and water.
  • To the soup, pan add salt, corn slurry, coriander leaves and switch off the flame.
  • Transfer into serving bowl and garnish with coriander leaves, lime juice.

Now sweet corn and tomato soup is ready to serve.

Recipe:

Cut the tomatoes into 4 pieces in a container which could easily fit in the pressure cooker. Add some spices cinnamon stick, bay leaf, cloves, star anise and pepper to the tomatoes. Also add ginger and garlic. Include a small amount of beetroot, coriander stems and 1 cup water. pressure cook altogether approximately 4 whistles. however, it is possible to cook them on stovetop for not more than 10-12 minutes or also microwave them at quite high for approximately 6 minutes. you can add fried bread crumps or small meatballs for additional taste.
