Ingredients used in Stuffed Zucchini
• Zucchinis - 4 numbers.
• Onion (grated) - 1 numbers.
• Tomato large (peeled & chopped) - 1 numbers.
• Bread crumbs - 5 tablespoon.
• Garlic (crushed) - 1/4 tea spoon.
• Salt - to taste.
• Pepper powder - to taste.
• Olive oil - 1 tablespoon.
• Parmesan or cooking cheese (grated) - 3 tablespoons.
Method:
  • Scrape zucchini skins and wash. Make a slit lengthwise and scrape out fleshy part.
  • Then place plenty of water to boil by seasoning with salt. Later put in the zucchini and boil for about 2-3 minutes. Drain them and keep aside.
  • In a pan heat oil, fry onions and garlic for a minute.
  • Then add tomato, scraped pulp, 2 tablespoons of bread crumbs, salt, pepper, mix and transfer to a baking dish.
  • Sprinkle the remaining crumbs, cheese over the zucchini and bake in a hot oven for 10-12 minutes.

Serve hot with pita or other bread.
