Boil Soya chunks in water along with some salt and turmeric for 10 minutes Wash it in cold water 2-3 times, squeeze them and keep it aside. Pour oil in a pan. Add musturd seeds, when they start to crackle add methi seeds, urad wash and then jeera. Add onions, slit green chillies, curry leaves. Add some salt to cook onions faster. After onions become transparent, add turmeric and then add ginger garlic paste. Saute for few minutes till the raw flavour goes. Add soya chunks and saute for few minutes. Add cucumber pieces. Saute for 5 minutes. Add chopped tomatoes and mix it well. Add red chilli power, tamarind juice, jagerry and salt. Keep the lid and cook for 5 minutes. If required now you can add frac14; cup of water. Cook for 5 more minutes. Garnish with coriander leaves and you can serve this with rice or roti.
