SNAKE GOURD CURD CURRY

Ingredients used in SNAKE GOURD CURD CURRY
• Snake gourd - 2 number.
• Mustard seeds - 1 tablespoon.
• Curry leaves - 2 springs.
• Garlic - (5-6) clove.
• Coriander leaves - 1 bunch.
• Green chilies (chopped) - (6-7) numbers.
• Mustard oil - 1 tablespoon.
• Dry red chilies - 2 number.
• Cumin seeds - 1/2 tea spoon.
• Turmeric powder - (1-2) pinch.
• Curry leaves - 1 springs.
• Salt - to taste.
Method:
  • Heat mustard oil in a pan till smoking hot, then add mustard seeds, reduce the flame.
  • To it, add red chilies, cumin seeds to the same pan and saute it.
  • When they splutter, add chopped green chilies, curry leaves, turmeric powder, salt and mix well.
  • Then add chopped snake gourd to it, and cook it with closed lid till they are slightly tender.
  • In the same pan, add bitten curd, mix and switch off the flame.
  • At last, garnish with chopped coriander leaves and serve this with plain rice or sambar rice.

Good recipe, however one has to careful not to add yogurt while the gourd is still cooking. Curd will lose its smooth texture.

Made this for dinner tonight after finding fresh s.gourd at the markets. Fantastic was right! Thank you vah chef. added the yogurt after turning off the heat. Combined with rice, fried fish and some white lime pickle. Finger licking good.?
