Ingredients used in SARSON WALI BHINDI
• Okra-bendi - 200 grams.
• Potato - 200 grams.
• Mustard oil - 2 tablespoons.
• Salt - to taste.
• Garlic (chopped) - 1 tea spoon.
• Onion (chopped) - 2 numbers.
• Green chili - 3 numbers.
• Turmeric powder - 1/4 tea spoon.
• Cumin powder - 1/2 tea spoon.
• Coriander powder - 1/2 tea spoon.
• Pepper powder - 1/2 tea spoon.
• Chili powder - 1/2 tea spoon.
• Mustard powder - 2 teaspoons.
• Sugar - 1 pinch.
• Lemon juice - 1/2 tea spoon.
• Coriander leaves (chopped) - 1 tablespoon.
Method:
Heat the pan and add Mustard oil, once the oil is hot add potato, bendi, salt and fry it for 5 minutes on a medium flame. Then transfer it to a plate. In the same oil add chopped garlic, ginger and saute it and add onion pieces, green chili and turmeric powder cook it for some time. For mixture: Take a bowl and add Cumin powder, Coriander powder, pepper powder, Chilli powder, Mustard powder and a pinch of sugar, mix it and make into a paste. And pour this mixture into a pan and mix it well. Then add fried potato and Bendi coated the mixture into it, then put the lid on and cook it for 2 minutes. Add some salt, squeeze some lemon juice and add chopped Coriander leaves toss it well. Serve this with Curd Rice.
