RIDGE GOURD AND POTATO CURRY

Ingredients used in RIDGE GOURD AND POTATO CURRY
• Oil - 2 tablespoons.
• Onions(slices) - 1 cup.
• Salt - to taste.
• Turmeric powder - 1/2 tea spoon.
• Green chillies - 2 numbers.
• Coriander powder - 1/2 tea spoon.
• Cumin seeds powder - 1/2 tea spoon.
• Ginger garlic paste - 1 tea spoon.
• Fresh grated coconut - 1/2 cup.
• Potato(cubes) - 1 cup.
• Garam masala - 1/4 tea spoon.
• Ridge gourd - 1 number.
• Tomato(chopped) - 1 cup.
• Green chili paste - 1 tablespoon.
Method:
  • Heat oil in a pan and add onions, salt, turmeric powder and saute it.
  • Add ridge gourd, tomatoes,Green chili paste, coriander powder, cumin seeds powder, ginger garlic paste and cook with lid on, until it is nice and soft.
  • Remove lid and add fresh grated coconut, boiled and chopped potato, garam masala and mix nicely and place lid and cook it for 3 minutes.

Now ridge gourd and potato curry is ready to serve.

Beerakaya is extremely versatile as it can absorb the flavors of other ingredients that it comes in contact and can be cook in various ways. Some of the very popular dishes made with this vegetable are: Beerakaya-Mulakkada Kura, Ridge Gourd Skin Chutney, Turai Beerakai with Milk, Beera kaya pottu podi curry and so on.  Ridge gourd is also cooked in combination with prawns and eggs or with fresh fenugreek leaves to make it healthy, nutritious and delicious.

Potatoes are prepared in lots of ways: skin-on or peeled, full or slice, with spices or without, baked or boiled or steamed or roasted. potato recipes are offered hot, however, many are initial cooked, then offered cold, especially potato salad and potato chips.

The world's preferred root veggie, the potato, keep in the cool, dark, well-ventilated place as, if encountered with light, they will sprout green limbs. They must be stored in paper, instead of plastic bags, because the last mentioned can make them go moldy. Stored in this way, old potatoes may last many days, even though new potatoes should continue for 3-4 days.

Tips:

Ridge gourd sometimes come out bitter. So, its better to taste the vegetable before making the vada otherwise your vada will turn out bitter.

Ridge gourd gives off a lot of water; you don’t need to add any excess water to this dish.
