Ridge gourd (turai) chutney

Ingredients used in Ridge gourd (turai) chutney
• Salt - to taste.
• Oil - 1 ½ tablespoon.
• Chana daal - half tea spoon.
• Mustard seeds - 1/4 tea spoon.
• Cumin seeds - half tea spoon.
• Tamarind - half tea spoon.
• Garlic (pods) - 2 numbers.
• Green chilli - 1 number.
• Ridge gaurd( turai) - 250 grams.
• Cashew nuts - half cup.
• Onions chopped - 1 cup.
Method:
  • Fry the tamarind, green chilies, garlic, cashew nuts, chana dal and transfer to a plate.
  • In the same pan add oil mustard seeds, cumin seeds, chopped onion, chopped ridge gourd and cook it for 2 minutes.
  • Then add water cover the lid and cook it for 3 minutes.
  • In a blender add ridge gourd mixture and fried ingredients and make it a fine paste and transfer into a bowl and add salt and mix it once.

Serve with hot rice/roti.

the recipe itself is good..however, every ingredient is literally soaked in oil making it very unhealthy!!! I am sure it can be made with less oil..without loosing on the flavour.
