Ingredients used in Pumpkin Idli
• All purpose flour - 1 cup.
• Sugar - 1 cup.
• Sooji rava/semolina - 1 cup.
• Pumpkin (grated) - 1(1/2) cup.
• Curd - 1 cup.
• Soda - 1/4 tea spoon.
• Baking powder - 1 pinch.
• Badam (finely chopped) - 5 numbers.
• Cashew nuts (finely chopped) - 5 numbers.
• Raisins (finely chopped) - 4 numbers.
• Ghee - 1 tablespoon.
Method:
  • In a bowl add semolina, sugar, all purpose flour, soda, baking powder, grated pumpkin, finely chopped badam, cashew nuts, raisins, ghee, mix it and add curd mix it like an idli batter consistency.
  • Grease the idli moulds with ghee. Then pour the mixture and steam it for 10 to 12 minutes.
  • Once done, allow it to cool for 2 minutes. Then remove it and serve hot.

Pumpkin is already sweet iby default right ? Then why so much sugar ? Wont it taste like a dessert then ?
