Ingredients used in Puff Pastry
• Water - 110 ml.
• Vinegar - 4 drops.
• Salt - pinch.
• Butter - 220 grams.
• Maida/allpurpose flour - 220 grams.
Method:
  • In a bowl melt 40grams of butter.
  • In another bowl add flour, salt, lime juice or vinegar, melted butter, water and kneed the dough.
  • Roll the dough in square shape and add the rest of the butter and seal it spread the dough and sprinkle flour and fould 3 times and keep in the fridge for 10 minutes repeat the same 6 times and in the finial roll the sheet evenly all the side and cut into square shape.

Use these sheets for egg puff or veg.

Hi Vah Chef. I got your idea of cooling the tray. Instead of keep putting the dough in the fridge for ever 10 minutes. I think you could use the ice pack under neat the tray and to avoid moisture wrap the ice pack with a thin towel.I have question...

IS there any alternative way to make this? With oil or dalda? Can you please make a video for that.I was thinking of experimenting I thought of Rolling it thin and brushing margarine or oil and then folding it and rolling it again?
