POTATO WEDGES PHONIX STYLE

Ingredients used in POTATO WEDGES PHONIX STYLE
• Potato(long slices) - 8-10 numbers.
• Corn flour - 3 tablespoons.
• All purpose flour - 1 tablespoon.
• Salt - 1 pinch.
• Spring onions(chopped) - 1 cup.
• Oil - to fry.
• Star anise - 1 number.
• Dry red chillies - 5 numbers.
• Garlic(chopped) - 1 tablespoon.
• Celery(chopped) - 1 tablespoon.
• Vinegar - 1/2 cup.
• Red chili sauce - 1/2 tablespoon.
• Tomato sauce - 1 tablespoon.
• Tasting salt - 1/4 tea spoon.
• Sugar - 1/2 tea spoon.
Method:
  • Cut the potato into long slices.
  • Take a bowl and add corn flour, all purpose flour, salt, little water and make a thick slurry.
  • Dip the potato pieces in the batter and coat it with spring onions and keep aside.
  • Heat oil in a pan and deep fry the pieces on slow flame.
  • Heat oil in the another pan and add star anise, dry red chili and saute it.
  • Add garlic, celery, vinegar, red chili sauce, tomato sauce, tasting salt, sugar, little water and saute it.
  • To it add fried potato wedges and toss it.

Now the potato wedge phonix style is ready to serve.
