Plum Stuffed in Chicken Kofta

Ingredients used in Plum Stuffed in Chicken Kofta
• Coriander powder - 1 tablespoon.
• Chili powder - 1 tablespoon.
• Turmeric powder - 1/4 tea spoon.
• Cream - 1 tablespoon.
• Curd - 1 cup.
• Onions (chopped) - 2 numbers.
• Ginger & garlic (chopped) - 1 tablespoon.
• Whole garam masala (cardamom, cloves, black cardamom) - 3 numbers.
• Garam masala powder - 1/2 tea spoon.
• Fennel powder - 1/2 tea spoon.
• Cardamom powder - 1/2 tea spoon.
• Chicken (mince) - 250 grams.
• Dried plum (chopped) - 5 numbers.
• Tomato puree - 1 cup.
• Chicken stock - 1 cup.
• Coriander leaves(chopped) - 1 tablespoon.
• Salt - to taste.
• Ghee - 2 tablespoons.
Method:
  • In a bowl add chicken mince, salt, cardamom powder, fennel seeds powder, garam masala powder, mix this well and divide the mixture into equal portions.
  • Take chopped dried plums, stuff in the seasoned minced chicken to make kofta then make to small dumplings.
  • Heat ghee in a pan, add whole garam masala, chopped garlic, ginger, chopped onions, salt, cook until onions are brown.
  • Add curd, turmeric, chili powder, coriander powder, tomato puree, and cook it with closed lid for 5 minutes till the tomatoes are cooked.
  • After that, add chicken stock cook it for 5 minutes then in this drop the chicken kofta let it cook for 10 minutes on a slow flame.
  • When koftas incorporategravy flavor, add cream to a small amount of gravy, pour to boiling gravy and garnish with chopped coriander.

I'm amazed at 'parallel' cooking. Italians have meatballs, Indians have this. I think I like like the Indian version more due to cardamom etc. and also the special 'plum surprise'. Thanks much chef!
