Ingredients used in Mutton korma
• Mutton pieces - 1 kg.
• Onions - 4 numbers.
• Yogurt - 3 cups.
• Red chili powder - 2 tablespoons.
• Coriander powder - 2 tablespoons.
• Turmeric powder - 1 tea spoon.
• Cumin powder - 1/2 tablespoons.
• Cloves - 6 numbers.
• Cardamom - 6 numbers.
• Pepper corns - 6 numbers.
• Cinnamon stick (1 inch) - 1 small.
• Saffron - 1 pinch.
• Ginger paste - 1 tablespoon.
• Garlic paste - 1 tablespoon.
• Oil - 1/2 cup.
• Salt - to taste.
• Ghee - 1/2 cup.
• Coriander leaves (chopped) - 1/2 bunch.
• Fresh cream - 2 tablespoons.
• Water - as required.
Method:
  • Heat little ghee and oil in a pan, add onions and saute it till the onions turn into brown colour. Now take them into a plate and let it cool.
  • Now take the onions in the mixie jar to grind it into smooth paste.
  • Add little oil to the same pan, add mutton pieces, ginger garlic paste then saute it for 5 minutes on slow flame.
  • Now add red chili powder, turmeric powder, coriander powder, salt, pepper powder, cardamom, cloves, cumin powder, yogurt, water and mix it thoroughly. Cook this for 30 minutes on slow flame.
  • Then add onion paste and mix it. When the mutton pieces are cooked then add saffron and fresh cream. Cook it with closed lid by stirring occasionally for about 10 minutes.
  • Atlast add chopped coriander leaves for garnishing. Now delicious mutton korma is ready to serve with rice or chapathi.
