Ingredients used in Mutton Khorma
• Mutton - 500 grams.
• Dry coconut - 30 grams.
• Onions - 115 grams.
• Ginger - 1 piece.
• Garlic - 5 cloves.
• Red chillies - 5 numbers.
• Curd - 1 cup.
• Coriander powder - 1 tea spoon.
• Poppy seeds - 1 tea spoon.
• Green chillies - 3 numbers.
• Cinnamon - 1 stick.
• Cloves - 2 numbers.
• Peppercorns - 2 grams.
• Cardamoms - 2 numbers.
• Oil - as required.
• Salt - to taste.
Method:
  • Wash and cut meat.
  • Soak in curd for half an hour.
  • Grind together poppy seeds, dry coconut, garlic, ginger, coriander powder, red chillies, green chillies and half the onions.
  • Heat oil, fry reamining sliced onions.
  • Add ground spices and meat. Fry for about 15 minutes.
  • Add remaining curds and tepid water and cook till meat is tender.
  • Add roasted and powdered cinnamon, cloves, peppercorns and cardamoms.
  • Cook for 5 to 10 minutes more and serve hot.
