Mint Idiyappam - Mint Rice Noodles

Ingredients used in Mint Idiyappam - Mint Rice Noodles
• Mint leaves - 2 bunch.
• Oil - as required.
• Water - as required.
• Rice flour - 1 cup.
• Cinnamon stick (1 inch) - 2 number.
• Bay leaf - 1 number.
• Cardamom - 2 number.
• Cloves - 2 number.
• Star anise - 1/2 number.
• Cumin seeds - 1/2 tea spoon.
• Sugar - 1 tea spoon.
• Coconut milk - 1+1/2 cup.
Method:
  • Take a blender, add mint leaves, little oil, salt, grind to a fine paste by adding required amount of water, strain it, transfer the extractedjuice to a pan, bring it to boil by adding little oil and salt.
  • Sligthly fry rice flour,transfer to the cooking pan with mint leaves juice, toss it and cook till the mixture reaches to arequired consistency.
  • Now take the required portion of the prepared mixture, stuff it in murkulu machine, press it on an idly steamer plate and steam cook for about 7 minutes.
  • To prepare coconut milk masala curry, heat coconut oil in a pan, add whole garam masala spices, sugar, coconut milk andbring it to boil.

Hot and tasty Mint Idiyappam is now ready to serve with delicious coconut milk masala.
