Ingredients used in Mango Rice in Colocasia Leaves
• Raw mango (grated) - 1 number.
• Mustard seeds - 1 tea spoon.
• Dry red chilies - 4 numbers.
• Chana dal - 1 tea spoon.
• Urad dal - 1 tea spoon.
• Hing / asafoetida - pinch.
• Cashew nuts - 4 numbers.
• Turmeric powder - 1 tea spoon.
• Curry leaves - 2 springs.
• Green chilies (chopped) - 4 numbers.
• Colocasia leaves (chopped) - 1/2 cup.
• Salt - to taste.
• Colocasia leaves - 7 numbers.
• Rice (boiled) - 1 cup.
Method:
  • Heat oil in a pan, add mustard seeds, dry red chilies, chana dal, urad dal, hing, cashew nuts, turmeric powder, curry leaves, slitted green chilies and saute it.
  • Now add finely chopped colocasialeaves, grated raw mango, salt (to taste), boiled rice and toss well.
  • Stuff the prepared mango rice in colocasia leaves and steam cook until leaves turn slightly tender.

Delicious Mango Rice in Colocasia Leaves is now ready to serve
