MANGO COCONUT RICE

Ingredients used in MANGO COCONUT RICE
• Grated raw mango - 1 cup.
• Grated fresh coconut - 1 cup.
• Cumin seeds - 1 teaspoons.
• Mustard seeds - 1 teaspoons.
• Green chillies - 3 numbers.
• Dry red chillies - 2 numbers.
• Ground nuts - 1 tablespoons.
• Chana dal - 1 tablespoons.
• Urad dal - 1 tablespoons.
• Salt - to taste.
• Curry leaves - 1 springs.
• Oil - 3 tablespoons.
• Rice - 2 cup.
Method:
  • Take a pan and add oil, cumin seeds, mustard seeds, ground nuts and saute it.
  • Then add chana dal, urad dal, dry red chillies, green chillies slices, salt and saute it.
  • Then add grated raw mango, grated coconut, saute it and add curry leaves.
  • Then add cooked rice and mix thoroughly and cook for 2 minutes.
  • Then take it to a plate and serve this.

Some people use dried coconut, but fresh coconut gives a better taste with some nuts. Coconut rice is also prepared on special occasions and during some festivals. It is also a preferred dish of children for lunch box.

During the festival of chitra pournami, every house in southern India prepares lavish lunch with all mixed rice called as Kalavai sadam in tamil. Elaborate pujas are done on Chitra pournami in temples and special rice offerings are made to Chitragupta. Coconut rice is one among the rice offerings that must be prepared.

Coconut rice is also prepared in many ways. It is either prepared with white rice in coconut milk or the coconut flakes. Coconut rice is found in many cultures throughout the world from the Caribbean to south East Asia. In the state of Tamil Nadu, India, coconut rice is very famous. It is made with coconut flakes (grated).

One way to make this dish is to make the rice separately and then mixing it with the coconut mixture. In Indonesia, plain coconut rice is made from white rice, coconut milk, ginger, fenugreek seed, and pandan leaves. The most common coconut rice recipe in Indonesia is Nasi uduk. The national dish of Malaysia called the Nasi Lemak is the most popular coconut rice recipe.

The coconut rice is amazing dish nicely blended with the intense flavor of coconut flakes, crunchiness of the cashew nuts and gives a nice texture when mixed with rice.

Coconut is a vital ingredient in many types of cuisines and is used in various culinary uses. It  provides oil for cooking and making margarine. The white, fleshy part of the seed, the coconut meat, is edible and used fresh or dried in cooking. The fleshy part can be desiccated to produce coconut milk in making curry dish and other dishes using coconut milk.

To prepare the coconut rice, cook rice separately and make sure the rice is fluffy. Heat ghee or coconut oil in a pan, add dry red chillies, mustard seeds, cumin seeds and saute till they crackle. Now add channa dal, urad dal, green chillies, fresh curry leaves and cashew nuts. Add salt to taste and little sugar and saute till soft then add the grated coconut and gently stir. Lastly add the rice and fry thoroughly for 2 to 3 mins

 

Coconut rice is a dish prepared by soaking white rice in coconut milk or cooking it with coconut flakes.[1] As both the coconut and the rice-plant are commonly found in the tropics all-around the world, coconut rice too is found in many cultures throughout the world, spanning across the equator from Southeast Asia to the Caribbean.

 

you can serve coconut rice as it is or pair with a gravy or curry like veg kuzhambu,  veg stew  or even plain homemade fresh  curd.

 

Coconut rice is something that I make regularly. It pairs well with so many side dishes and it’s easy to put together. It’s something that you can try when you are bored of your everyday rice and curry. I think there are different ways of making coconut rice, like cooking rice in coconut milk or adding grated coconut to cooked rice.

 

Rice preparations that highlight a single ingredient like Lemon Rice, Tamarind Rice, Raw Mango Rice or Coconut Rice are more popular in south India than pulaos. Each of these has a unique flavour, which sets it apart from other rice preparations. Here, in this delectable Coconut Rice recipe, you will be able to savour the satiating texture and nutty flavour of coconut, perked up with a traditional tempering of mustard seeds, dals, etc. While sesame can be omitted from the recipe, adding it accentuates the flavour and aroma of the Coconut Rice making it all the more enjoyable. The crunch of roasted cashews is another aspect to look forward to in every mouthful of this delicious rice.
