Ingredients used in SEETHAPHAL RABIDI
• Seethaphal - 2 numbers.
• Milk(fat milk) - 100 ml.
• Sugar - 1 tea spoon.
• Soda - 1 pinch.
• Cardamom powder - 1 pinch.
• Pistachios - 3 numbers.
• Almonds - 3 numbers.
Method:
  • Boil fat milk in a low temperature for 30 minutes stir while boiling.
  • Add sugar and stir till dissolved then add soda.
  • Then add Seetha phal pulp, a pinch of cardamom powder.
  • Cook it for another few minutes and garnish with Badam slices, pistachios on top.

SEETHAPHAL RABIDI

Seethaphal Rabidi is a traditional Indian sweet dessert made with custard apple, whole fat milk flavored with little cardamom. The texture of this sweet delicacy is extremely rich, creamy, and silky that just slips down the palate very smoothly on eating. A very specially flavored rabidi made with awesome seasonal fruit. The Seethaphal Rabidi tastes yummy when it is served chilled.

 

It is a very simple to make this dish but cooking the rabidi is slightly tedious as you need to thicken the milk which is worth trying for its exotic taste. Often Rabidi is mildly sweetened and can also be made with kesar or saffron. This rabidi has an excellent taste of custard apple that also thickens the sweet and enhances the taste with its sweetness. The rabidi also gives a nice crunchy feel on bite by garnishing badam and pistachio flakes.

 

Recipe:  Seethaphal Rabidi

 

Ingredients:

  1. Seethaphal or Custard apple       -       2 nos
  2. Whole Milk or Full Fat Milk      -       250 ml
  3. Sugar                                                -       1 – 2 tsp
  4. Soda                                                  -       a pinch
  5. Cardamom powder                       -       a pinch
  6. Pistachios                                       -       3 nos
  7. Badam                                              -       3 nos

 

Directions:

  1. Boil the whole milk in low temperature for 30 minutes stirring in between.
  2. Add little sugar and still until the sugar gets dissolved. Then add a pinch of soda and stir slowly. (by adding this, the milk will not cuddle).
  3. Add in the Seethaphal pulp (discard the seeds), mix well and then add pinch of cardamom powder and cook for few minutes until thick and creamy.
  4. Allow cooling and then serve garnished with almond and pistachios flakes.
