This is a tasty and crunchy tea time snack. Pudina Sev is a yummy, awesome and very flavorful crispy snack that goes well when served with tea or coffee or can also be eaten as a time-pass snack. This aromatically flavored sev has a nice pleasant essence and taste of the pudina or mint juice which is added in the batter while mixing. Mildly spices, crispy, crunchy on bite and an amazing feel and satisfaction you get while eating this pudina sev is truly divine to the palate.
Sev, a very popular thin noodle like savory snack is made of gram and rice flour flavored with carom seeds (ajwain). This snack is also well known as Oma podi or Karapusa in Southern India. You can make a variety of sev adding different flavorful ingredients such as spinach/ palak (palak sev), garlic (garlic sev), pepper sev or the fondest of ingredient, potato to make aloo sev. Sev is generally used to garnish a variety of chaats like the aloo chaat, bhel puri, sev puri, papdi chaat, ragda pattice etc. It can be prepared in different types of moulds using different sizes. But normally, the very thin variety of sev is popularly available in most sweet shops. They are displayed in most of the shops that sell Indian sweets or savory snacks (farsan).

The sev batter is easy to prepare and is put in the mould (sev maker) which has very small holes on the bottom side and a press that goes inside the mould. There are different types of moulds available in the market, i.e. press type or rotating type. As you rotate the mould and press down the batter, very thin vermicelli like strings come out of the holed plate and this is gently dropped in hot oil that is deep fried until golden brown in color and crisp.
Sev, in few parts of northern India is also known as Bhujjia usually made with gram flour and a variety of other flours like moath, moong or boiled and mashed potatoes. Gram flour is a staple ingredient all over India, Pakistan and Bangladesh cuisines. It is excellent flour, gluten free and contains high proportion of carbohydrates. Despite this, in comparison with other flours, it has relatively high proportion of protein.
The mint flavor compliments well into the sev and gives a refreshing, earthy savor. Pudina or mint leaves is an indispensable ingredient in most Indian cuisines. They can be easily crushed or torn into pieces and added to tea and a variety of salads, soups etc. Pudina flavor graces a variety of exotic dishes with its overwhelming aroma. Apart from its striking aroma dashing into food, it also offers enormous health benefits.
Pudina or mint leaves is loaded with antioxidants and phyto-nutrients that help keep stomach cramps and acidity at bay.
